Amaranth has an exceptionally high nutritive value with high digestibility, an amino acid composition close to optimal for human requirements, high quantities of quality carbohydrates, substantial dietary fibre, is gluten free and has no cholesterol. When mixed in a ratio of 30% Amaranth flour and 70% with other cereals such as wheat, maize or rice, Amaranth will increase the protein quality by 30% for wheat flour, 40% for maize flour and 25% for rice flour.
